They are located in theEl Cepón site, on a north-south facing slope, at 500 metres above sea level, with a Mediterranean-continental climate, which constitutes a privileged enclave for good development and maturation of the grapes, although they offer a low yield.

Harvesting is done by hand in 18-20 kg cases. It is a free style wine that is bottled without any fining or stabilisation treatment.

CONSERVATION

It is possible that over time a natural sediment of colouring matter or tartrates may appear, which is an unmistakable sign of purity and integrity. It will develop positively in the bottle over the next 10 years. Store in a cool (12º - 14º C) and dark place in a horizontal position.

TASTING NOTE

Intense cherry red colour.
Intense varietal aromas of the Mencía grape, dominated by red (cherry and cassis) and black (plum) fruits, with hints of oregano and wild herbs. Smoky and spicy notes (coconut and vanilla) contributed by the oak wood in the background.
Powerful, balanced palate, very polished tannins, with great length and a finish full of long-lasting aromatic sensations.

Pairing:
Stews, oily fish, red meats and cured cheeses. Serving temperature: 18º-20º C.
