Terrafondada is a wine made exclusively from old Mencía vines which grow in the area of the same name. It is made in oak barrels that have been hollowed out and filled to the brim, with grapes destemmed by hand, cut grain by grain with a scissors through the petiole.
The barrel is covered with plastic by fixing it with an elastic band, so that it is hermetically sealed and that it the bunches of grapes undergo carbonic maceration. At the end of the process, the grains are trodden in the traditional way and then pressed, the malolactic fermentation is then carried out. in French oak barrels of three wines where it remains for 20 months.
